Creamy Vegetable Soup. Winter is coming .. yeay .. When the wind blow outside your window, there is nothing in the world that could warm you from inside like soup do. The hot steam and the savory of stock will make you feel cozy. So here it is. I want to share the soup recipe. However, the recipe I want to share is simple creamy vegetable soup recipe. This recipe I got from internet by J. Kenji Lόpez as creator. It is delicious for your kids too.
First, you must prepare your vegetables, the main ingredients. In this recipe, the vegetable that used is carrot. You could use your preference of vegetable. Since carrots are used in recipe, don’t you forget to peel and cleanse them. After that, cut your carrots in small shape, thus your vegetable will cook quicker. J. Kenji Lόpez use raw carrots in this recipe. However, you could roast the carrots, if you like the sweet taste from caramelization.
Second steps, choose your aromatic complement. In this recipe, it is use garlic, leek, onion and ginger. Be careful when you use ginger. Ginger has strong flavor, it tends to give strong impact so maybe it is not flavor you wanted when your creamy vegetable soup recipe is done.
Third, sweat your aromatic vegetables. What is sweating? Sweating is slow cooking your vegetables in moderate heat. With sweating, the liquids that seep out from vegetables do not evaporate completely and your vegetable not caramelized. So, the aromatic vegetables are not overpowering the taste of main vegetables.
Fourth, add spices and/or pastes. This addition is not necessary if you like pure taste soup. J. Kenji Lόpez used harissa paste, cumin and coriander seed for his recipe. After the spices are smell, you could do next step.
Fifth steps, add your liquid preference. This recipe is used homemade vegetable stock. However, some people like to use chicken stock or dairy cream or plain water. Whatever your choice, don’t pour the stock over vegetables too much. Just until the stock cover your vegetables over an inch or so. Simmer for a little bit until your vegetable are cooked enough.
Sixth, purée and emulsify your soup. Purée your vegetables with blender and add some butter or olive oil to emulsify it. You could it while your blender is running. Unless you use potato as your main vegetables, whatever the way you use to purée will result smooth soup.
Seventh, add acid as your finish steps to season your soup. Fresh lemon juice is used for the recipe. If you don’t like acid from citrus fruits, you can change with vinegar.
Eighth steps and the last, add garnish. Basically your soup is ready to serve, but you could add some garnish to give more texture for your soup. J. Kenji Lόpez add garnish which is roasted pine nut in olive oil with some parsley and lemon zest.
