Coffee Cake With Green Goddess Granola Crumble: This cake is like your favorite muffin with crumble topping, so it’s guaranteed to disappear in no time. It’s also the perfect way to use up that last little bit of granola.
Ingredients:
1½ cups (185 g) whole wheat or spelled flour
½ cup (100 g) unrefined cane sugar
1½ teaspoons baking powder
One teaspoon cinnamon
¼ teaspoon salt
¾ cup (190 ml) almond milk
¼ cup (60 ml) vegetable oil
For The Topping:
1 cup (100 g) Green Goddess Granola
1cup (65 g) brown sugar
2 tablespoons whole wheat flour
2 tablespoons vegan butter
Instruction:
1 Preheat the oven to 400°F (200°C). Lightly grease an 8 x 8-inch (20 x 20-cm) cake pan.
2 Mix the dry ingredients. Add the milk and oil and stir to make a thick batter. Spread into the prepared pan.
3 Mix the topping ingredients until a sandy texture is reached. Distribute on top of the batter and press down lightly.
4 Bake for 20 to 25 minutes, or until a toothpick inserted into the cake comes out clean. Allow to cool for 10 to 15 minutes, then slice and serve.
