15-oz. can pumpkin
12-oz. can evaporate skim milk
¾ cup granulated Splenda
½ cup buttermilk baking mix
2 eggs, beaten
2 tsp. pumpkin pie spice
1 tsp. lemon zest
whipped topping, optional
1. Combine all ingredients except whipped topping. Mix until smooth.
2. Cover and cook on Low for 3 hours.
3. Serve with whipped topping, if desired.
