Red Curry Chicken
• 2 cups cubed chicken meat
• Curry Paste
• 2 cups tomato paste
• 1/4 cup coconut milk or cream
• Cilantro for garnishing
• Brown rice for serving
Make Curry Paste. Add the tomato paste; stir and simmer until smooth.
Add the chicken and the cream. Stir to combine and simmer for 15-20 minutes.
Serve with brown rice and cilantro.
